A special feature of the DOUGHEXPERTS bread fermentation system is the robust knife stirrer for the comminution of entire bread loaf, since in this procedure excess bread becomes again the valuable raw material of tomorrow. As a component of the sourdough production, this has a beneficial effect on the quality as well as on the economic level.
After 42 hours of ripening time the bread fermentation can be used uncooled for a week as a leaven.
