The machine has four rolls, the top two of which have a grooved surface which incorporates the fresh and the scrap dough into a common mass. The bottom rolls are smooth, in order to give the final thickness to the extruded dough sheet.
The thickness of the sheet can be as low as 6 mm, as opposed to a very minimum thickness of 8-10 mm which can be obtained by using the traditional 3-roll sheeter.
The gap between the smooth rolls can be adjusted by the operator by means of servo-motor controls. Separate motors control the speeds of the top and the bottom rolls in order to ensure flexible adjustment.
A pressure gauge continuously monitors the pressure of the dough in the compression chamber and automatically adjusts the speed of the two top grooved rolls in order to maintain the consistency of the dough being extruded.
All the motors and gearboxes are located outside the side of the unit to ensure high standards of hygiene and excellent accessibility for inspection and maintenance purposes.
The machine is one component in a modular construction concept which is part of Imaforni's design philosophy; this unit is used in conjunction with one or more gauge rolls to form the vertical cut&sheet laminator.
