UK Universal Smoking Cooking Oven

1/4

The Reich AIRMASTER® UK Universal Smoking Cooking Oven offers high loading capacity, vertical air circulation and functions for drying, smoking, cooking and baking.

High loading capacity

Specification	Value
Model	AIRMASTER® UK
Air Circulation	Air transfer is 6000³/hr per chamber.
Heating System (in Electric units)	28 KW per chamber
Control	Unicontrol 3000 TS –Touch screen
Program storage	99 programs
Smoke Generation	Maxx Smoker G 505 H
Scope	Hot, warm and cold smoking
Smoking material	Chip shavings (granule size 4 – 12 mm)

Short energy efficient processes, highest uniformity in product treatment, best product quality and high loading capacity.
Applications include drying, smoking, cooking, hot coking / baking, raw sausage production and climate-controlled smoking. The system can be equipped with the necessary functions for all desired applications.
Vertical air circulation is best suited for hanging products. A newly developed blowing system treats products evenly in all chamber trolley positions; high circulating air output provides the shortest possible process times.
Pneumatic valves enable fully automatic operation with complete control at all times.
Electric units have heating elements incorporated in the top of the chamber. Water sprayed over these elements generates steam, controlled by electromagnetic valves through the main control panel.
The control board sits beside the unit, at the lateral side of the door, with easily accessible switches, computer and control lamps.
An incorporated core-temperature probe measures temperature inside the meat.
Controllable relative humidity allows chamber air to be moistened in every working cycle.
Computer-controlled automatic cleaning includes the unit, Smoke Generator, head space and all pipe work.

Select time, temperature, humidity and core temperature in separate steps for reddening, drying, smoking, cooking, showering and cooling.
Recall stored programs by program number. Programmed and actual data appear side by side for monitoring.
Change or stop running data at start-up or during operation without changing pre-programmed data.
The latest touchscreen model allows clear, easy programming and adjustment, with clearer understanding of the operating process.

Fully automatic, continuous and reliable smouldering of Beechwood chip shavings using a geared-motor feeding unit and targeted carbonized air addition through a special high-pressure blower (side-channel compressor).
Fresh smoke passes through unburned smoking material, producing very aromatic smoke and allowing all aroma-forming components to develop.
Special ignition provides smoke approximately one minute after starting, without pre-ignition before the smoking step.
Three smoke densities can be entered at the control.
Exhaust-air-reduced operation with throttled fresh-air supply emits only as much chimney exhaust as fresh air required for smouldering, permitting economical smoking with minimal environmental burden.
